Chocolate Lava Goo Cake

Hey everyone,

I’m late due to times conflicting and technical difficulties, SORRY.

But, here it is, the recipe worth the wait.


Chocolate Lava Goo Cake. (Makes about 3 dozen cupcakes)

Preheat oven to 350°F

What you will need:


      • 4 cups of Flour
      • 1 cup of cocao
      • 3 Tablespoons of Baking Powder
      • 1 ½ cups of Sugar
      • 1 cups Hershey’s Syrup
      • 3 cups of Milk
      • 3 egg WHITES (beaten vigorously to a frothy texture)
      • 1/3 cup Vegetable Oil

For “Lava goo”

  • 2 Packs Jell-O Chocolate Fudge pudding mix (Prepared as directed on box)


Mix dry ingredients first, then add liquids and egg whites. Beat until smooth.

Fill Cake pan 1/2 full (I like to use cupcake pans so individuals get their own little cake).

Add dollop of pudding mix into the center of the cake(s).

Drizzle batter just to cover the top of the pudding mix.

Bake 25-30 minutes (or until done).

When done, the lava cakes should have baked holes on the tops. Next we’ll prepare a chocolate buttercream icing to add to the holes for additional chocolateness 😉

Chocolate buttercream icing:


    • 3 tablespoons of milk,
    • 3 tablespoons of cocoa,
    • 1/2 cup Hershey’s syrup,
    • ¼ stick of butter and
    • one cup of powdered sugar and

beat vigorously. It will be soupy. Continue adding powdered sugar until firm. If needed, add more cocoa to taste.

When cakes are cooled, but still warm, add icing to center. It will melt and add a “lava” liquid inside the cake.

Long Awaited, Apple Cake!

Okay. I think I have this recipe about as good as I’m  going to get it. HOWEVER, make it for yourself, and give me any advice or input!!!

Matt’s (soon-to-be) Famous Oatmeal Apple Cake


To Start: Grind Oatmeal into a flour. This can be done in a blender or similar device (I use the magic bullet, it works great).

You will need:

  • 2 cups Oatmeal Flour
  • 1/3 Cup Granulated Sugar
  • 2 teaspoons Baking Powder
  • 1 1/2 teaspoons Ground Cinnamon
  • 2 Tablespoons Applesauce
  • Splash of Apple juice
  • 1/4 Cup Buttermilk
  • 1/4 Cup Milk
  • 1 Egg
  • 1 medium Granny Smith Apple (chopped)
  • 1/4 teaspoon (sprinkle) Cinnamon
  • 1 Tablespoon Brown Sugar
  1. Preheat Oven–350°F
  2. Bake chopped apples with a sprinkle of cinnamon and brown sugar for about 10 minutes (until semi-soft) and then place to the side.
  3. Mix measured dry ingredients, Continue with other ingredients. You may beat batter, or ( I ) use a wood spoon. Mix in apples
  4. Pour batter into 8×8 (or 9×9) greased pan.
  5. Bake for 20-25 minutes or until done.
  6. Sprinkle Granulated (or powdered sugar on top.

To know that the cake is baked fully, do the toothpick trick

Place a clean toothpick down the center of the cake and multiple other areas. If it comes out clean, it’s likely done, if it comes out wet and/or gooey, a few more minutes.

I hope you enjoy it. Try it and let me know! The texture is a little awkward, remember, you’re using oatmeal flour, not regular bleached flour.

This contains a lot of fiber as well!

Haha, okay, I feel like I’m doing a movie premiere. I know I’m dragging out my recipe release, but I want it to be good, so I’m doing another batch [or 2] for critiques. But It’ll be on here soon!

My main ingredients include apple, oatmeal and milk.

Any ideas what it might be? Leave a comment!

Hint: It’s not apple cinnamon instant oatmeal 🙂

In the mood for a healthy lunch?

I started making lunches a while back and my fiance and I bought ingredients/food for this week’s lunch, which is amazing.

We are taking salads this week, thus to be healthier, we’re building our’s from scratch.

We started with:

  • Spring mix of greens,
  • shredded carrots (you can even buy them already shredded! [if you’re lazy like me :P])
  • Block Cheese (your preference [I got Colby and mozzarella]) cut the cheese to cubes.
  • Then, meats, the best part. I went to local grocery stores deli and bought Roasted smoked turkey and get it cut about a 1/2 inch and then cubed it as well.
  • Lastly a purple onion sliced.

Great, tasty and healthy lunch!

I’ve added fresh fruit, along with a pudding cup and water to fill out the rest!

Two Kitchen Gadgets Worth Having

         Okay everyone, so I’ve put down a couple of recipes for drinks now, and you’ve read in them that I recommend the Magic bullet.

         Thus my first kitchen gadget worth having a magic bullet. You can find all official details here:

          But bottom lines, it’s amazing. you can put popcorn in it, and have corn meal in less than a minute.

         It makes awesome frozen drinks, grinds romano cheese, sausage, I even made applesauce in it last week.  There’s a lot of knock-off brands of the MB but, they really aren’t the same, and they break easily.

It’s a little pricey, but they can be found at retail stores much cheaper.

         My second item is a Tassimo machine. It’s a Starbucks at home basically. It’s amazing. We started using them at my church and you can’t make pretty much anything with them–Lattes, cappuccinos, macchiatos, spiced chai tea lattes, hot chocolate, regular coffee–the list is endless.          I’m not a fanatic with cluttering up the kitchen, but these (in my opinion) are must-haves!
